Celiac Disease is on the rise and recent studies have shown that since the 1950's our statistics have almost quadrupled. However, most people think that if they are not diagnosed with Celiac then they are in the clear, which is the farthest thing from the truth. We are now coming to understand that 1 in 3 are suffering from Gluten Sensitivity, which can go untreated and undiagnosed for years. 

Some of the conditions associated with any type of gluten intolerance are as follows: 
ADHD
Anemia
Anxiety
Migraines/Chronic Headaches
Depression
Diabetes
Eczema/Skin Rashes  
Epilepsy
Focus Issues
Inflammatory Diseases (Arthritis)
Insomnia
GI Issues 
Memory Problems
Mood Disorders

& much more

Ultimately, if you are not diagnosed with Celiac or GS but suffer from any one of the issues mentioned above, I would highly suggest doing a 2 week elimination diet to monitor how your body reacts. It could be exactly what you need to see any type of clinical improvements in your overall health and vitality.
